S(ixg4lgeazgye3ounmtqcz0z5))/MasterTemplates/WineLook/Theme/Images/Icons/iconGrape4.gif) Russian Article: FROM AUSTRALIA WITH LOVE
FROM AUSTRALIA WITH LOVE

S(ixg4lgeazgye3ounmtqcz0z5))/MasterTemplates/WineLook/Theme/Images/Icons/iconGrape4.gif) Wine Corkage
Corkage is an important and somewhat volatile issue of debate within both the winemaker and wine consumer community. Many traditional lovers of wine prefer the old cork closure for their wine. This point of view is completely justifiable as corks can provide quality seals for wine, are relatively cheap and easy to implement and possess an irreplaceable sense of romanticism that has for centuries been associated with corked wine. On the other hand, many modern critics of corked wine present the scientific argument that mould can grow within the spores of the corks, which can effect the taste and aroma of the wine endowing it with a ‘flat’ taste.

S(ixg4lgeazgye3ounmtqcz0z5))/MasterTemplates/WineLook/Theme/Images/Icons/iconGrape4.gif) Dessert and Fortified Wines
Sticky sweet dessert wines have been well known for many centuries as cellaring wines due to their high sugar content. They vary enormously in their levels of alcohol, acidity and sweetness. As the name suggests, this wine performs best when matched with desserts. Richer and sweeter wines can cope with richer dishes and more intense flavours. It is also worth considering the salty, sweet contrast when choosing a cheese or salted nuts to complement your wine. Some dessert wines made from grapes can become infected with fungus called Botrytis Cinerea, which attacks the fruit and reduces its moisture content, thereby concentrating the sugar. If the grapes hang on the vine too long even until first frost this can lead to a late harvest resulting in ice wine.

The most important thing to keep in mind is not to rush when choosing the bottle you want to drink. Taking the time to select the correct glassware and serving the wine at optimal temperature will reduce any chances of the wine spoiling, and all those years of self restraint going to waste. The temperature of wine in the glass tends to rise rapidly, so cool it to 2 degrees Celsius lower than the common recommendation, particularly on a hot day. Recommended serving temperatures can be viewed on the WineLook tasting sheet. Temperature has an immense impact on the taste of a wine.

S(ixg4lgeazgye3ounmtqcz0z5))/MasterTemplates/WineLook/Theme/Images/Icons/iconGrape4.gif) Wine Cellar Art
Cellar art has been know for centuries, from the time when our ancestors began taking notice of the aesthetic beauty of wine storage areas. Archeological evidence shows that viticulture (wine growing), which probably originated from Armenia, had spread to Mesopotamia and Egypt by approximately 3000BC. Hand crafted pottery jars have also been found along the wine route, inscribed with details of the vintage and name of grower. There have been many discoveries of other forms of cellar art, which signifies the great appreciation and reverence that our predecessors felt towards wine, and its respective place of cellaring. Some of these other forms of cellar decoration included Fresco tiles and murals.

Many grapes with red skin can be used to produce Rose wines. Hue and intensity vary according to the variety and the extent of cold maceration (colour extracted from the wine skins). After extracting the juices from the grapes and some colour from the skin, the Rose wine acquires a distinct magnificent pale red, rose, onion skin, pink or orange colours. Here, colour is not necessarily an indication of age, since Rose wines are generally drunk when young.
