Popular as Cabernet Sauvignon, this wine is originally a French variety from Bordeaux. Cabernet Franc is less tannic and less structured than Cabernet Sauvignon. However it has virtuous earthiness and fruitfulness (raspberry and redcurrant fragrance). Cabernet Franc is grown in most viticultural areas in Australia, and has gained popularity not only as blend with Cabernet Sauvignon, but also as a pure drink. Cabernet Franc on its own is wonderfully soft and somewhat subdued on the pallet, it is also fruitier and more herbal than Cabernet Sauvignon, this is reflected in its lighter colour and lower levels of tannin. Typically, Cabernet Franc is more spicy in aroma than Cabernet Sauvignon, often reminiscent of plums and violets.
