This grape has been acknowledged as the premier red variety. Cabernet Sauvignon produces an intensely coloured and flavoured wine. The taste and smell of a Cabernet Sauvignon vary in different regions. For Coonawarra and Margaret River, the wine has deep aromas of blackcurrant, capsicum, and mint, many have noted a fine tannic mouthfeel. Coonawarra Cabernet Sauvignon can also resemble eucalyptus in its aromatic properties. From Barossa Valley, Cabernet wines are usually thicker and more long lived. Usually aged in oak casks and have long cellar terms. Cabernet Sauvignon is a very versatile wine, it can be drunk on its own or blended with other softer, rounder tasting varieties which excellently complement the intense tannic and fruity characteristics of the wine. It is commonly blended with Merlot, Cabernet Franc, Petit Verdot or Malbec. The high tannin concentration of Cabernet Sauvignon provides the wine with a high cellaring potential and a smooth, fresh finish.
