Different Merlot producers create their wines in many different styles and tastes. These range from light, very soft juice reds with little tannin to full bodied, black, mordant wines which will mature with time. To produce a full bodied wine, Merlot is usually blended with Cabernet Sauvignon, Shiraz or both. You may sense the aromas of plum, roses and a slight tinge of blackcurrant. Upon taste inspection you may feel a velvety soft sensation. Merlot is a very capricious wine, so before commiting to a particular bottle research and try before you buy. Some safe and honoured regions for Merlot include Mudgee, Coonawarra, Barossa Valley, Rutherglen and Margaret River. Lighter dishes which go with Cabernet Sauvignon also go well with Merlot. These include Roast Beef, Pasta, Sausage, Pizzas etc.
