The best wine of this type should have a light to medium body, ruby – bright red colour. Flavours of cherry, roseberry, and strawberry, also earthy forest floor aromas. In selecting wine, we recommend to avoid obvious oak tannin and green stems smell. If your palate senses velvety fruits upon your initial sampling of the wine, this is the desired outcome. When using with food, allow the delicate flavours of the wine to shine through. Grilled salmon, roast beef and dish featured with mushrooms go well with Pinot Noir. Some immerging regions for this wine include; South Australia, Adelaide Hills, South West Australia and Tasmania.
It is also worth noting, that Pinot Noir in Australia is a specialty of small boutique, artisan wineries. This is because Pinot Noir must be hand made in small batches with dedication and passion. This grape variety cannot be harvested industrially due to its capricious nature, as a result, only limited amounts of high quality Pinot are produced. Unfortunately, Australian Pinot Noir is still under-rated, which means that many are surprised by the great quality and taste of the wines from boutique and single wineries.
