On a cold night nothing is more satisfying and warming than a fine Port. Port is a deliciously black – purple liquor with a intricate mouthfeel consisting of tannic, liquorice and black fruit sweetness. Port is a fortified wine which originated from Portugal’s Douro Valley, today, there are many different styles of Port exist around the world. In Australia, Port comes in a number of different styles: tawny, vintage, ruby, late bottles and white port, however, the name ‘Port’ is reserved for the Portuguese Port. Port has defining characteristics consisting of high tannin levels, sweetness, rich colour and longevity. This is due to the manner in which Port is made, whereby tannin and colour is extracted from the skins during the brief fermentation period. This is essentially the same process which red wines such as Touriga, Shiraz, Cabernet Sauvignon, Grenache and several others undergo. Port is an excellent wine to cellar, as it can last for many years (as much as 50 years or more). In Portugal, old traditions dictate that a bottle of Port is cellared with the birth of a newborn, so that the Port and child mature together. This is particularly an after dinner drink that can be enjoyed with cheese or can be savored with dessert.
