Winemaker's Notes.
Grapes were harvested at optimum ripeness at about 13 Baume then air bag pressed to minimise phenolics and retain fruit flavours. Fermented in stainless steel with no oak influence to deliver fruit purity. Stabilised and filtered then bottled in April 2007 to retain fruit freshness and vitality of the wine.
